Welcome to our brasserie in Håverud's old mechanical workshop. Here, raw industrial history, sparkling water, and the scent of freshly smoked fish come together.

Our smokehouse is located in Håverud, in the historic old paper mill premises. Here, we swim against the current – like a happy little salmon against the world – with the goal not to be the biggest, but to offer one of the most delicious smoked fishes in the world. This is where our meticulous team transforms fresh raw ingredients into refined delicacies that reach food connoisseurs all over Europe every week.
For us, fish smoking is an art form. We stick to the ancient method of burning carefully selected wood shavings with the exact right moisture content to create a rich smoke. To achieve our characteristic tenderness, we filter the smoke through a water mist. This separates out unwanted particles and delivers a smooth flavor that is unique to our craft. It’s like a modern Picasso – just in edible form.
Patience and precision are the foundation of everything we do. Every fillet of salmon or rainbow trout is filleted and dry-salted according to all the rules of the craft – sometimes with our own spice blends – to achieve the perfect firm texture and a taste that leaves you wanting more. Welcome to Gallery Skutestan, a unique art venue housed in the magnificent premises of the old paper mill. Here, beneath high ceiling beams and surrounded by walls that bear the traces of decades of industrial history, we have created a space where contemporary art meets a raw and honest environment.
In Hallingsalen, Andreas Lundberg is exhibiting, the photographer behind Galleri Skutestan, shares pieces from the series Silent Stories – a story-driven photography project where real life stories are given a new artistic expression.
The room also features photographs by Oskar Lundberg as well as pictures by Victor Ville Johannesson / Depressiva Döden (The Depressive Death), , showcasing paintings where dark humor, anxiety, and existential bleakness meet.
Here, three artists with a strong connection to Dalsland are spotlighted: Frideborg Bryth, Brita Widén and Stig Nelson. Their artistry spans from naively colorful depictions of nature and locally rooted painting to monumental works, scenography, and sculpture. Together, they tell the story of a vibrant Dalsland art scene where the place, nature, and the personal gaze take center stage.
In the Kalander Hall, a collection of works by Dalsland artists from the 1930s onwards is on display. Featured here are, among others, paintings by John Lind, Pelle Blom, Uno Johansson, Elis Svensson, Erik Kihlberg, Ragnar Högman, Anders Thyberg, Björn Carlén and Ragnar Holt.
