A brasserie is not just built from menus, tables, and walls. It is built by people. By those who have been there from the very beginning, those who joined along the way, those who have stood in the kitchen, behind the bar, on the terrace, in the gallery, in the ice cream parlor, by the DJ booth, and in all those moments that are not always seen — but always felt.

For 30 years, we have been fortunate enough to surround ourselves with people who have brought taste, color, shape, energy, and soul to this place. Some have been with us since the early years. Others joined later and became natural parts of our brasserie family.

These are some of them.

Bodin & Mangan

From the early years — where it all began to take shape

Bodin & Mangan belong to those names that are practically built into the walls. They were there during the early years, when the pace, tone, and feel began to find their shape. Through laughter, hard work, ideas, and friendship, they were part of the foundation of what would later become so much more than just a smokehouse and a brasserie.

Some people pass through. Others become part of history.

Dennis & Jerrka

The kitchen, the wisdom, and the heart behind the journey

Some people become more than colleagues and friends. They become part of the place's soul. For us, Dennis and Jerrka are exactly that.

Jerrka is our gammelgädda (the old pike) — a reliable voice, mentor, and friend who has helped Lars stay on course many times over the years. With experience, warmth, and that special feeling for both people and possibilities, he has been an important sounding board on this journey. The kind of person who doesn't always need to say the most, but often says exactly what is needed.

Dennis has stood by Lars’ side for half the journey, becoming a natural force in the kitchen. With pride, passion, and his Spanish touch, he has helped develop the flavors in a way that pairs perfectly with our smoked fish. Here, tapas, spices, olive oil, garlic, and warmth have met Dalsland’s freshly smoked delicacies — and the result is exactly the kind of flavor fusion we love.

Together, Dennis and Jerrka represent much of what has made our journey possible: loyalty, knowledge, humor, courage, and heart. One with his hand in the kitchen and his eye on the flavors. The other as a mentor, friend, and steady compass through the years.

They are two personalities who have left a clear mark on our history — and who remain an important part of the feeling by the canal’s edge.

Katarina & Håkan

Lejonet & Björnen — artisan flavor in every scoop

Katarina and Håkan are our ice cream family and deliver what we believe is the world's most delicious ice cream from Lejonet & Björnen. For our 30th anniversary, they are taking the ice cream experience to a new level with their super-premium Deluxe range.

Here we are talking about ice cream made with real ingredients, and once again, true craftsmanship and luxury. Creamy pistachio with authentic pistachio paste, Italian Amarena Cherry, dark chocolate with deep character, and Macadamia Brittle with crispy caramel. It is the perfect ice cream for those who want to finish a dinner by the Dalsland canal with something truly, truly delicious.

After salmon, bubbles, and evening sun comes the scoop that makes everything complete.

Andreas & Anni

Art, color, and shape by the canal

Creativity doesn't stop in the kitchen with us. Lars’ cousin Andreas and his Anni are our artistic family, bringing color and shape to our venue through images, expressions, and art. With Gallery Skutestan and their feel for atmosphere, details, and experiences, they turn the area around us into something more than just a place to eat.

They add that something which cannot always be put into words, but is felt immediately when you arrive: color, personality, movement, and soul.

Be sure to take a stroll through the gallery before or after your visit with us. The food, the art, and the canal actually belong very well together.

Anna & Johan

Anna and Johan are old friends, former colleagues, and today our supplier of champagne and carefully selected bubbles. They are part of our family in that natural way — the relationship began long before deliveries, lists, and orders.

They make sure the glasses are filled with the right feeling. Champagne, bubbles, and refreshing drinks that pair perfectly with long evenings by the water. But their contribution doesn't stop there. During our anniversary nights, Johan steps behind the DJ booth to set the summer beats, while Anna spreads energy, warmth, and chilled glasses under the open sky.

It is friendship, celebration, and intuition in the exact same bottle.

Nicola

Italian passion and our beloved pinsa

This year, we welcome Nicola Perrelli to our brasserie family. Nicola is an old friend of Lars’ cousin Andreas and joins us with exactly the warmth, energy, and food joy that we love. With his Italian heritage, he has a hand in one of this year's big arrivals: pinsa through Perrelli's Pinsa.

Pinsa is the lighter, crispier, and airier cousin of the pizza. It has roots in Roman culinary tradition and is baked using a unique blend of wheat, rice, and soy flour. The dough is left to rise for a long time — a full 72 hours — resulting in a crust that becomes crispy on the outside, fluffy on the inside, and wonderfully light to eat.

For us, the pinsa is an obvious anniversary newcomer. It fits perfectly into our world: genuine culinary craftsmanship, quality ingredients, a relaxed atmosphere, and flavors that make people want to order another one.

VENETO

Veneto is the pinsa of contrasts – sweet honey, creamy goat cheese, fior di latte, and crunchy walnuts. A flavor journey for those who love unexpected combinations that just work.

LIGURIA

A green and fresh pinsa that breathes the Mediterranean. Creamy stracciatella, fior di latte, sun-dried tomatoes, and a generous dollop of pesto bring acidity, sweetness, and herby notes to every bite. A true summer favorite – all year round.

On our menu, you will find some of our own interpretations where this Italian crispiness meets the shores of the Dalsland canal. We top our freshly baked pinsas with our own, freshly smoked delicacies straight from the smokehouse. It is a new way to experience Italian food culture – fresh, airy, and with a taste of both Italy and Dalsland at the exact same time.
